Pomegranate chicken salad, so simple, so delicious.. & I usually pair it with a homemade dressing of lemon juice, chilli flakes, small drop of olive oil, salt and pepper and a small dollop of hummus! Yum!
On this particular occasion I also warned up falafel to give it a spicy kick. What I love about this meal is its versatility, you can use what ever you have in your fridge.
It is a lovely, light alternative meal in the summer and so quick to make!
